You could always do a vibrato by turning the tuning knob back and forth. I've seen several performers do this - mostly for theatric effect.

I have seen more than one guitarist (not classical) play a note, then reach and squeeze the string behind the nut with the right hand to raise and return the pitch to normal. This works with any pitch, not just open strings.
